Tabalí DOM Cabernet Sauvignon is a premium red wine from Chile's prestigious Maipo Valley, produced by the pioneering Tabalí winery established in 2002. The "DOM" designation refers to fruit sourced exclusively from the hallowed Dom vineyard, a gentle south-facing slope in coastal Maipo that receives less direct summer sunshine and benefits from afternoon breezes off the Maipo river gorge, creating a naturally cooler microclimate ideal for slow, even ripening.

The Dom vineyard's colluvial, stony soils naturally control vine vigor and grape production, yielding a 100% Cabernet Sauvignon of exceptional concentration and elegance. Grapes are hand-harvested into 20kg bins at optimal phenolic ripeness, carefully destemmed and sorted, then fermented in small stainless steel tanks at controlled temperatures. The wine is aged in French oak barrels for up to eighteen months, developing complexity while preserving the vineyard's distinctive character.

On the nose, the wine delivers explosive blackcurrant and cassis alongside aromas of cedar, rosehip, and star anise. The palate is full-bodied and rich with a lively vein of freshness providing balance. Fine-grained tannins give structure and grip while allowing a supple, very long finish. Critically acclaimed with ratings in the 93–94 point range from Robert Parker's Wine Advocate, this is considered one of Tabalí's icon wines and a benchmark expression of Chilean mountain Cabernet Sauvignon.
