This soft-ripened cheese features a creamy, spoonable texture wrapped in natural spruce bark, which imparts a subtle forest aroma and rich, mustard-juniper flavor profile. Originally developed in 2016 to celebrate Firefly Farms' 15th anniversary, this cheese won the prestigious 2018 Good Food Awards. Made with pasteurized goat milk, vegetable rennet, cheese culture, salt, and enzymes, the cheese is one of the first American-made goat's milk bark-strapped styles. To enjoy, simply cut and remove the top rind, then spoon out the gooey, mushroomy paste. Pairs beautifully with artisan bread, crackers, and fruit.
