Costco's Farmed King Salmon Steaks are cut from Chinook salmon, the largest and richest of the Pacific salmon species. King salmon is prized for its exceptionally high fat content, buttery texture, and full, robust flavor that sets it apart from leaner varieties like sockeye or Atlantic salmon. The steaks are sold by the pound and cut cross-section style through the fish, keeping the bone in for even cooking and enhanced flavor.
Farmed King salmon are raised in a controlled environment on a carefully managed diet, resulting in consistent fat marbling and a milder flavor compared to wild-caught King salmon. The flesh is a deep orange-pink color and retains moisture well during cooking, making it forgiving across a wide range of preparation methods.
These salmon steaks are well suited for grilling, pan-searing, broiling, or baking. Cook to an internal temperature of 125°F–135°F for a moist, medium result, or to 145°F per FDA guidelines for fully cooked fish. Pairs well with lemon butter, herbs, or light citrus-based sauces.
