Shenk's Homestead Sour Mash Whiskey honors the legacy of historic American whiskey figure John Shenk, who in 1753 founded a distillery that was to become known as Michter's in the 20th Century. This full-bodied small batch Kentucky sour mash whiskey is made according to the traditional sour mash process whereby a portion of the previously distilled whiskey mash (referred to as "setback") is added into the next batch.
Made with a substantial amount of rye, this expression showcases a rye-forward profile. Some releases have featured whiskey finished in specially toasted French oak barrels sourced from the Vosges region of France, naturally air dried and seasoned for 24 months. Other releases have utilized special American oak species such as Chinquapin oak (Quercus muehlenbergii) during maturation.
Tasting notes typically include a dark amber appearance, with aromas of toasty burnt sugar, spice, crème brûlée, and honey. The palate offers a rich, toasty experience highlighting baking spice, dried fruits, toffee, nougat, burnt sugar, and hints of cherry. The finish is smooth with lingering spice and delicate oak. Bottled at 91.2 proof (45.6% ABV) in 750mL bottles.
