Hatozaki 12 Year Old Umeshu Cask Finish is a limited-edition Japanese blended malt whisky produced at the Kaikyo Distillery in Akashi, Hyogo Prefecture, Japan. Founded by Kimio Yonezawa, the Kaikyo Distillery is part of the Akashi Sake Brewery, which has been brewing since 1856 and distilling spirits since 1917.

This small-batch whisky is crafted from 100% malted barley, aged for a minimum of 12 years in American oak bourbon casks, then finished for an additional 6 months in casks that previously held umeshu, a traditional Japanese plum liqueur. The umeshu used for the cask finishing is made from plums grown in Hyogo Prefecture, macerated in Ginjo sake for 6 months, then aged in enameled vats for 2 years.

On the nose, cereal and iodine notes introduce a rich tasting experience. The palate reveals delicate pear and apricot flavors blending with honeyed and malty nuances. The finish is long and sweet with a refined impression. Bottled at 46% ABV (92 proof), this whisky is unchill filtered and free of added colorants.
