Toko Sun Rise is a Junmai Ginjo sake crafted by Kojima Sohonten Brewery, founded in 1597 in the Yonezawa region of Yamagata, Japan. One of the oldest active breweries in the country, Kojima Sohonten earned its place in history as the exclusive purveyor of sake to the legendary Uesugi samurai clan, elevating the Kojima family to samurai royalty. The current president, Kenichiro Kojima, is the 24th generation of this distinguished lineage.
Sun Rise is brewed from Dewasansan rice, an heirloom variety descended from the iconic Omachi strain and grown exclusively in Yamagata prefecture — the first region in Japan to receive a geographical indication (GI), or appellation, for sake. The rice is polished to 55% seimaibuai, lending the sake its refined, clean character. It is 15% alcohol by volume with a nihonshu-do of +1, indicating a nearly neutral, slightly dry profile.
On the palate, Sun Rise delivers grassy, floral aromas with notes of green apple and melon, finishing soft and smooth. It is vegan and gluten-free, and pairs well with teriyaki salmon, sautéed snow pea shoots, and maple glazed ham.
Kojima Sohonten is only the second brewery in Japan to achieve complete carbon neutral status, operating on 100% recycled renewable energy generated from sake lees, making Sun Rise as environmentally conscious as it is elegant.
