These wild-caught Hokkaido scallops come from the cold, pristine waters of Hokkaido, Japan, and are prized for their exceptionally rich, sweet flavor and firm, tender texture. The U-9 size designation means there are fewer than 9 scallops per pound, making each individual scallop impressively large.
Hokkaido scallops are sold raw and frozen, preserving their fresh-from-the-sea quality. They are a premium product found in select Costco locations and are considered among the finest scallops available. Their flavor and texture hold up beautifully across a wide range of preparations.
For a classic presentation, pat the scallops dry and sear them for one to two minutes per side in a cast iron skillet with a high-smoke-point oil such as canola or avocado oil.
