Vau de Vey is one of the most prized Premier Cru vineyard sites in Chablis, the northernmost appellation of Burgundy, France. This white wine is made entirely from Chardonnay grapes cultivated on ancient Kimmeridgian limestone soils rich in marine fossils, which impart the signature minerality and flinty precision that define great Chablis. Sold as a case of six 750ml bottles, this Premier Cru designation places it among the top classified vineyards in the region, a step above village-level Chablis and just below the coveted Grand Cru tier.
In the glass, the wine shows a luminous gold-green hue with aromas of citrus blossom, lemon zest, and green apple. The palate is crisp and focused, delivering flavors of ripe pear, lime, oyster shell, and stony minerals, underpinned by vibrant natural acidity. Typically fermented and aged in stainless steel to preserve terroir expression and freshness, the finish is long, clean, and refreshing. Alcohol content is approximately 12.5โ13%. Contains sulfites.
An ideal pairing for oysters and shellfish, white fish such as sole or turbot, mild soft cheeses, and delicate seafood preparations. This wine is enjoyable now and benefits from short-term cellaring of two to five years.
