Château La Dominique is a prestigious Saint-Émilion Grand Cru estate situated in Bordeaux, France, bordering the renowned Cheval Blanc and Figeac estates. Owned by the Fayat family since 1969, the château is celebrated for producing elegantly styled, medium to full-bodied red Bordeaux wines with silky tannins and a complex aromatic profile.
The 29-hectare vineyard is planted primarily with Merlot (81%), complemented by Cabernet Franc (13%) and Cabernet Sauvignon (6%). The terroir features deep gravel over clay with sandy soils on gently sloping hillsides. Fermentation takes place in thermo-regulated stainless steel vats with a 25–35 day maceration, followed by malolactic fermentation and approximately 16 months of aging in 50–70% new French oak barrels. Winemaking consultant Jean-Luc Thunevin has guided the estate since 2007, contributing to a notable resurgence in quality beginning with the 2009 vintage.
Expect aromas of dark and red berries, flowers, licorice, truffle, and spice, with a refined, fresh finish. Best enjoyed with 9–12 years of cellaring in top vintages, or decanted 1–2 hours if opened young. Ideal with classic meat dishes, game, duck, lamb, and mushroom-based preparations. Serve at 15.5°C (60°F).
