Château Bouscassé Les Jardins Philosophiques is a distinctive dry white wine from the Pacherenc du Vic-Bilh appellation in Southwest France. Crafted by pioneering winemaker Alain Brumont, this unique blend of 70% Petit Courbu and 30% Petit Manseng showcases the full potential of these rare, little-known grape varieties grown on clay-limestone soils at approximately 15-year-old vines.
The grapes undergo careful plot selection and very slow, gentle pressing. Fermentation takes place in temperature-controlled vats at 16–18°C, followed by 10 to 12 months of aging on fine lees with regular stirring in stainless steel tanks, with no barrel aging. The result is a wine that pours a medium gold color with aromas of honey, citrus, exotic fruit, wild flowers, and a touch of nuttiness. Medium-bodied with good acidity and a nice tanginess, it delivers flavors of nectarine, apricot, and peach with a clean, mineral-driven finish.
This versatile wine pairs well with seafood, fish, foie gras, risotto, or enjoyed on its own as an aperitif. 13.5% ABV.
