Beecher's Yule Käse is a limited-edition seasonal cheese from Beecher's Handmade Cheese, available exclusively during the holiday season. It is a distinctive variation of their award-winning Flagship Reserve, crafted by first clothbinding the wheel and open-air aging it for 13 months to develop a firm body and natural rind.

After initial aging, the truckle is further treated with red wine and local raw blackberry honey, which imbues the cheese with an elegant depth of flavor. The result combines Flagship Reserve's characteristic notes of roasted nut and caramel with floral highlights of honey and red berries, finishing with a pleasantly earthy saltiness.

Yule Käse has earned recognition at the American Cheese Society, winning 2nd Place in the Marinated Cheeses, Cow's Milk category in both 2013 and 2014. It is sold by the pound at Costco deli counters while seasonally available.
