Canneto Vino Nobile di Montepulciano Riserva DOCG is a prestigious Tuscan red wine produced by Cantina Canneto in Montepulciano, Italy. It is composed of 95% Sangiovese, 2.5% Merlot, and 2.5% Cabernet Sauvignon, with grapes harvested and hand-selected from end of September through mid-October.
The grapes are destemmed, soft pressed, and fermented in stainless steel vats at a controlled temperature of 26°C with selected yeasts. Maceration lasts 18 to 20 days. The wine ages for 18 months in 5-hectoliter French oak barrels, followed by additional aging in larger 30 to 50-hectoliter wooden barrels, and then at least 6 months of bottle aging. The result is a wine built to age at least 10 years, developing notes of black currant, cherry, licorice, tobacco, and spice with a wonderfully balanced, long finish.
Best served in a tulip glass at 16 to 18°C after opening the bottle a couple of hours before drinking. Pairs excellently with red meats, grills, stews, game, Pienza pecorino cheese, aged cheeses, and vegetarian dishes featuring eggplant or radicchio.
