Silver pomfret (Pampus argenteus), also known as white pomfret or butterfish, is a premium wild-caught ocean fish prized across Chinese, Southeast Asian, and Middle Eastern cuisines. These whole fish feature a distinctive flat, oval body with shiny silver-white scales and are sold fresh by the pound at Costco's seafood counter.
The flesh of silver pomfret is firm, white, and mildly sweet with a delicate flavor, and the fish contains relatively few bones despite being sold whole. It is excellent prepared by steaming with ginger and scallions, pan-frying in a light soy-based marinade, or braising in a savory sauce. Sourced from wild-catch fisheries in the Indo-Pacific region, including the Indian Ocean and South China Sea, silver pomfret is considered a high-value table fish.
Previously frozen to preserve freshness during transport from the source fishery. For best results, thaw overnight in the refrigerator before cooking and pat dry prior to frying or steaming.
