Each wheel is crafted from fresh, unpasteurized cow's milk and infused with foenegreek (fenugreek) seeds, which lend the cheese a distinctive sweet, nutty flavor with notes reminiscent of maple syrup. The cheese has a smooth, semi-firm texture with visible fenugreek seeds throughout.
