The pasta is produced using traditional bronze die extrusion, which gives each nest a rough, porous surface texture that grips and absorbs sauces far more effectively than smooth machine-cut pasta. The dough is mixed in three controlled phases at low temperature for over 30 minutes, developing gluten structure slowly to produce a firm, satisfying bite.
