Simonet Brut Blanc de Blancs is a non-vintage French sparkling wine made from 100% Ugni Blanc grapes. Produced using the Charmat method, the wine undergoes a brief maceration during the first fermentation to enhance the grape's characteristic citrus and white fruit aromas, which are preserved through a second fermentation in temperature-controlled stainless steel tanks.

The wine is bright and pale gold in color with a lively mousse of delicate bubbles. The bouquet offers inviting aromas of white flowers, fresh-picked pear, and apple. On the palate, light fine bubbles provide a refreshing character that is fruity and well-balanced between residual sugar (12–14 g/L) and palate-cleansing acidity. The alcohol content is 10.5% ABV.

This versatile sparkling wine pairs well with fish and seafood, fried and salty snacks, poultry dishes, and light pastas. It also makes an excellent base for champagne cocktails, especially mimosas.
