J. Moreau & Fils Chablis 1er Cru 'Vaucoupin' is a Chardonnay-based Premier Cru white wine from the renowned Chablis appellation in Burgundy, France. The estate, a specialist of Chablis wines since 1814, sources this cuvée from very old vines rooted deeply into the stony, clay, and limestone soils of Vaucoupin — a 27-hectare vineyard on the right bank of the Serein river in the commune of Chichée.

In the glass, the wine presents a brilliant pale gold color. The nose is intense and mineral, opening up to hints of hazelnut, peaches, and bergamot with grilled almond notes. On the palate, it is ample and powerful, with a forward mineral character leading to flavors of brioche, citrus, dried fruits, and spice. The wine has an alcohol content of 12.5% and contains sulfites.

Grapes are pressed delicately in a pneumatic press, followed by temperature-controlled fermentation in stainless steel vats at 18–20°C to preserve fruit character. Malolactic fermentation is completed to soften acidity, and the wine is then aged on its lees for 18 months, with 15% aged in once- or twice-used oak barrels for a subtle oak influence. Best served at 14°C (57°F) and capable of aging 4 to 6 years from vintage. Pairs beautifully with oysters, shellfish, seafood, rich fish such as salmon, and mild soft cheeses.
