Roli Roti Porchetta is an Italian culinary masterpiece featuring a beautifully hand-rolled and tied free-range heritage pork loin and belly, stuffed with aromatic spices including garlic, lemon zest, rosemary, sage, bay leaf, and marjoram. This fully cooked, sous vide prepared porchetta is ready to crisp in the oven, making it an impressive and convenient alternative to traditional roasting.
The pork is sourced from vegetarian-fed heritage pigs raised without antibiotics or added hormones in crate-free conditions. The roast is seasoned with a spice rub made from salt, garlic, lemon juice, white wine, black pepper, lemon zest, rosemary, sage, bay leaf, and marjoram, creating a savory interior with a spectacularly crispy, crackly skin exterior.
To prepare, microwave the porchetta in its pouch for 5 minutes, then roast uncovered at 425°F for about one hour until the internal temperature reaches 140°F and the skin becomes crispy. Let rest for 15 minutes before slicing into half-inch portions with a serrated knife. The porchetta makes an exceptional centerpiece for special occasions and the leftovers are perfect for creating gourmet sandwiches on ciabatta with broccoli rabe, cheese, and onion jam.
