Kurosawa Junmai Kimoto is a premium Japanese sake brewed using the traditional Kimoto method at a historic brewery in the mountains of Nagano Prefecture, Japan. The Kimoto fermentation process — one of the oldest and most labor-intensive in sake production — produces a naturally rich, full-bodied character that sets this sake apart from modern brewing styles.

This sake showcases the natural character of the Kimoto method: full-bodied and earthy, yet surprisingly light and exquisitely balanced. It offers sweet and savory aromas of coconut, banana, vanilla bean, and walnut, with a round entry leading to an earthy, medium-bodied palate with mineral flavors. The 1.8L format (a Japanese "isshobin" or magnum bottle) contains approximately 15% ABV.

Kurosawa Junmai Kimoto is extremely versatile and can be enjoyed hot, cold, or at room temperature. It pairs excellently with unagi (eel) rolls, boiled pork, smoked salmon, cheese, fried chicken (karaage), tempura, and yakitori. The brewery was founded by the Kurosawa family in Nagano and the brand was introduced to the U.S. market in 1998, coinciding with the Nagano Winter Olympics. Today it is one of the most recognized premium sake brands in the United States.
