Paniza Garnacha from Slate is a red wine produced by Bodegas Paniza from the Cariñena Denominación de Origen Protegida in Aragon, Spain. The wine is made from 100% Garnacha (Grenache) grapes grown in selected vineyards with distinctive slate soils — very poor in organic material and shallow in depth — which impart a characteristic minerality to the wine.
After destemming and crushing, the grapes undergo a 15-day temperature-controlled fermentation in stainless steel tanks with multiple pump-overs daily. The wine then goes through malolactic fermentation, followed by eight months of aging in lightly toasted French oak barrels, before continuing to age in the producer's cellars after bottling. It has an ABV of 16%.
The wine displays a bright, intense cherry-red color. On the nose it is complex and elegant with aromas of candied cherries. The palate is concentrated yet silky, with a mineral base and notes of strawberries and chocolate. Its minerality and structure create a lengthy finish. It pairs well with braises, game, red meat, and poultry. The wine has earned 90 points from Guía Peñín, a Gold Medal at the Berliner Wein Trophy, a Silver Medal at Mundus Vini, and a Silver Medal (93 points) at the International Wine Challenge.
