Bozal Cenizo is an artisanal single maguey joven mezcal crafted from wild Maguey Cenizo (Agave durangensis) harvested from the hillsides of Durango, Mexico. The agaves are slow-roasted in traditional earthen pit ovens, fermented in open-air tanks using only naturally occurring yeasts, and then double distilled. Bottled at 47% ABV, this mezcal is produced by Mezcalero Juan Manuel Conde in the village of San Nicolas, Durango.
Bozal Cenizo opens with bright aromas of orange peel, floral notes, vanilla, and wet stone. The palate delivers bold flavors of mesquite, sweet barbecued meats, and dark chocolate, complemented by hints of cocoa, minerality, and lemon. The finish is smooth and long with a pleasant lingering smokiness. The name "Bozal" translates to "wild" in Spanish, reflecting the brand's dedication to using wild and semi-wild agave varieties and traditional production methods. The bottle features a distinctive handmade ceramic design.
