Papilou is a Pétillant Naturel (naturally sparkling) rosé wine crafted by Gérard Bertrand from organically grown Cinsault and Pinot Noir grapes in the Languedoc-Roussillon region of southern France. Named in homage to the Abbey of Saint Hilaire near Limoux — whose monks are credited with discovering the secret of effervescent wines as early as 825 AD — this wine embodies centuries of French winemaking tradition. It is classified as Vin de France and carries a 12% alcohol content.
The wine presents a beautiful salmon-pink color with glimmering reflections. The bouquet is complex and lingering, with aromas of red fruit — strawberry and raspberry — backed by hints of toasted bread. On the palate, delicate bubbles deliver an extraordinary vivacity alongside a rich, indulgent texture and crisp acidity that carries notes of red fruit through the finish. Awarded 90 points by James Suckling: "Aromas of strawberries with pomegranate skins, pie crust and dried flowers. Medium-bodied with creamy mousse and a polished texture. Crisp acidity and with delicate red fruits on the mid-palate. From organically grown grapes."
The grapes are harvested at peak acid-sugar balance and immediately pressed in a pneumatic press. The Pinot Noir is not macerated in order to preserve its delicate hue. After alcoholic and malolactic fermentation in vats, the wine is blended and matured in barrel for 8 months. Best served chilled at 10°C as an aperitif, or paired with smoked fish, oysters, seafood, soft-ripened cheese, or red fruit desserts.
