Costco's wild warm water split lobster tails are sourced from warm tropical waters, typically the Caribbean or Bahamas, and sold fresh or frozen by the pound. Each tail is pre-split down the center of the shell, making them ideal for grilling, broiling, or baking, as the split presentation allows heat and butter to penetrate the meat evenly and creates an impressive presentation.
Warm water lobster tails come from spiny lobster species (Panulirus argus and related), which differ from cold water Maine lobster in that they lack large front claws. The tail meat is firm, mildly sweet, and slightly less rich than cold water varieties, making them a popular and more accessible alternative for home chefs and entertaining.
These tails can be prepared by brushing with butter and seasoning, then broiling or grilling shell-side down until the meat is opaque and reaches an internal temperature of 140°F. They pair well with drawn butter, lemon, garlic, and fresh herbs.
