These wild-caught warm water lobster tails are sourced from tropical and subtropical waters and sold fresh by the pound at the Costco seafood counter. Each tail is split down the center lengthwise, making them ideal for grilling, broiling, or baking — the split presentation allows butter, garlic, and seasonings to penetrate the meat while also producing an attractive presentation for serving.
Warm water lobster tails come from spiny lobster species (Panulirus argus and related species) found in the Caribbean, Bahamas, and Central American coastal waters. Unlike cold water lobster, warm water tails have a slightly firmer texture and a mild, sweet flavor that pairs well with clarified butter, lemon, and fresh herbs. The tails contain the full portion of tail meat with the shell intact, which helps retain moisture during cooking.
To prepare, thaw overnight in the refrigerator if frozen, brush with seasoned butter, and grill or broil cut-side up for 8–12 minutes depending on size, until the meat is opaque and reaches an internal temperature of 140°F. Sold by the pound, so price and yield vary by the weight of the tails selected.
