Chiyonosono "Shared Promise" is a premium Junmai-grade sake from Kumamoto prefecture on Japan's southernmost island of Kyushu, produced by the Chiyonosono Brewery, founded in 1896. As a Junmai sake, it is brewed purely from rice, water, koji, and yeast — no added distilled alcohol or additives of any kind. This distinction is historically significant: Chiyonosono was the first Japanese brewery to resume brewing true junmai sake after the rice shortages of World War II, pioneering the entire Junmai category.

The sake delivers a soft, expansive texture with aromas of orange blossom and a subtle sweetness layered with delicate umami. Tasters frequently note orange creamsicle on the palate with a hint of white pepper on the finish. Brewed with Gohyakumangoku rice, polished to 65%, with an alcohol content of 15%, a sake meter value of +3.5, and an acidity of 1.75, this is a balanced and approachable sake that can be served cold (40–60°F), at room temperature, or gently warmed.

Its name honors a historic promise: in 1967, when Chiyonosono was finally able to resume junmai production, the first fresh press was shared from a large, red lacquered sake cup called a shuhai. This became an enduring tradition — a shared promise to uphold quality and craft sake from rice alone each year. The brewery, helmed by president Masuhara Honda and master brewer Yoshihiro Inaba, continues to specialize in rice cultivation, working with heirloom rice strains that give their sake a distinctive texture and aroma.
