USDA Choice beef loin tri tip roast, sold whole and untrimmed by the pound. This premium cut comes from the bottom of the sirloin and is known for its rich beef flavor and excellent marbling. The untrimmed version includes the fat cap which helps keep the meat moist during cooking and adds extra flavor. Tri tips typically weigh between 2 and 3 pounds with almost no waste fat or gristle, feeding 4-6 people per roast.
This cut is blade tenderized, a process that involves punching the meat with needles to break up muscle fibers and increase tenderness. The blade tenderization means the meat should be cooked to a minimum internal temperature of 145ยฐF followed by a three minute rest, or cooked low and slow at lower temperatures for extended periods to ensure food safety. The tri tip is versatile and can be smoked, grilled, reverse seared, or cooked sous vide for optimal tenderness. When ready to serve, slice thinly against the grain for maximum tenderness.
