Xuri preserved duck eggs are a traditional Chinese delicacy dating back to the Ming Dynasty. These century eggs are duck eggs preserved in a mixture of salt, clay, and wood ash over several weeks, resulting in a distinctive appearance with dark translucent egg whites and creamy grayish-green yolks. The preservation process gives them a unique savory flavor with a smooth, creamy texture. Each case contains 20 individually wrapped eggs.
Century eggs are incredibly versatile and can be enjoyed in multiple ways. They are commonly mixed into congee (savory rice porridge), served as appetizers with soy sauce and pickled ginger, combined with chilled silken tofu, incorporated into stir-fries, or added to salads. The eggs can be eaten directly after peeling without cooking. When eaten alone, they have a slight ammonia smell, but this becomes much less noticeable when prepared in traditional dishes.
