Holladay Soft Red Wheat Bourbon is a Bottled-in-Bond Missouri straight bourbon whiskey, aged a minimum of 6 years at the Holladay Distillery in Weston, Missouri. The mash bill consists of 73% corn, 15% soft red wheat, and 12% barley, with the wheat substituting for the traditional rye to yield a notably softer, sweeter flavor profile with a smooth finish.
Bottled at 100 proof (50% ABV), this bourbon meets the strict requirements of the federal Bottled-in-Bond Act of 1897, meaning it was distilled in a single season by a single distiller, aged in a federally bonded rickhouse for at least 4 years, and bottled at the same location where it was distilled. It also carries the Real Missouri Bourbon designation under a 2019 state law, requiring that every step—mashing, fermenting, distilling, aging, and bottling—take place within Missouri, using Missouri-grown corn and oak barrels manufactured in the state.
The Holladay Distillery was founded in 1856, making it the oldest distillery in Missouri and the oldest distillery west of the Mississippi still operating on its original site. The property sits atop active limestone springs first charted by Lewis and Clark in 1804. Soft Red Wheat, known for its lower protein levels and minimal gluten, contributes to the bourbon's characteristically soft and smooth finish.
