La Sauvagine is a premium soft, surface-ripened washed-rind cheese crafted by Fromagerie Alexis de Portneuf in Quebec, Canada. This 14 oz (400 g) half wheel is made from pasteurized cow's milk and cream, resulting in a supple, moist rind that ripens gently from the outside in. The ivory interior becomes lusciously runny as it matures, offering a rich, buttery taste with a hint of earthy mushrooms and a melt-in-the-mouth texture.
Named after the tens of millions of migratory waterfowl — ducks, geese, and teals — that blanket the Quebec sky each autumn, the French word "sauvagine" captures the rustic, wild spirit of this distinctly Canadian cheese. With approximately 32% fat content, it delivers an indulgent, creamy experience befitting a fine artisan cheese. It pairs beautifully with crusty bread, fruit preserves, charcuterie, and light white wines or sparkling ciders.
La Sauvagine has earned international recognition, including a Super Gold at the 2023–24 World Cheese Awards and first place in its category at the 2022 SIAL International Cheese Competition.
