This Cajun-inspired cheese features the traditional Holy Trinity of Louisiana cooking with green bell pepper, celery, and onion, plus chives and garlic. Aged over 60 days, this cheese has a creamy, buttery texture with a pleasant sharp bite that bridges Gouda and cheddar characteristics. The seasonings provide a delicately mild, savory flavor with the bell pepper being the most distinct, while soft textural pieces of vegetables and herbs enhance the experience. The cheese has a firmer texture than typical Gouda and maintains its structure when melted.
