Prosciutto di Carpegna carries DOP (Denominazione di Origine Protetta) status, meaning its production is strictly regulated and tied to its place of origin. It is made exclusively from Pesante Padano pigs sourced from the Italian regions of Lombardia, Emilia-Romagna, and Le Marche. During curing, the ham is treated with sweet Cervian sea salt, then coated with lard and a proprietary spice blend before aging for a minimum of 20 months. The result is a ham with a distinctive round but slightly flattened shape, differentiating it from Prosciutto di Parma and Prosciutto di San Daniele.

The flavor profile is mildly sweet and delicately salty, with a soft, almost elastic texture and intensely savory aroma.
