Fresh wild-caught coho salmon heads, sold by the pound. Coho salmon (Oncorhynchus kisutch) is a Pacific salmon prized for its rich flavor and firm, red-orange flesh. Salmon heads are a traditional and highly valued cut in many culinary traditions, including Japanese, Korean, and Southeast Asian cuisines, where they are used to make deeply flavorful broths, soups, and stews.
Salmon heads contain the collar, cheeks, and jaw โ portions that are exceptionally moist and gelatinous due to their high collagen content. They are well suited for miso soup, fish head curry, braised preparations, and slow-simmered stocks. The cheek meat is considered a delicacy and is particularly tender. Wild coho salmon is naturally rich in omega-3 fatty acids, high-quality protein, and key vitamins and minerals including vitamin D and B12.
