Bayou Mardi Gras XO Rum is a premium aged rum from Lacassine, Louisiana, crafted by Bayou Rum from molasses derived from sugarcane grown in the rich soils of the Mississippi River Delta. The rum is distilled in copper pot stills and aged using the traditional Solera method for up to six years in ex-bourbon barrels before receiving a finishing period in ex-sherry barrels, resulting in a deeply complex and richly flavored spirit.

The rum pours a deep mahogany color. On the nose it offers stone fruit, plum, and sandalwood with fruity and woody undertones and subtle hints of tobacco. The palate reveals layers of orange marmalade, dark stone fruit, black currant, and tupelo honey, with notes of prune and oak. The finish is dry and medium-long, lingering with honey, black pepper, and sherry character.

Bottled at 40% ABV (80 proof) in a 750ml format, Bayou Mardi Gras XO earned a Gold Medal at the 2019 San Francisco World Spirits Competition and a 95-point rating from Tasting Panel in 2022.
