Les Astéries is a prestigious single-vineyard Kosher red wine from Saint-Émilion Grand Cru, Bordeaux, France, produced by renowned vintner Jonathan Maltus. The estate takes its name from the uniquely dense limestone — called "astéries" — found in the Saint-Émilion terroir, the same stone historically used as building material for its strength.
The wine is crafted from a 1.2-hectare vineyard planted to approximately 83% Merlot and 17% Cabernet Franc, with some vines reaching up to 80 years of age. The vineyard's clay-over-limestone soils impart the wine's signature mineral character. Vinification occurs in temperature-controlled wood vats at Chateau Teyssier using gravity-flow techniques, with malolactic fermentation in barrel and aging in up to 100% new French oak. Production is extremely limited at roughly 350–400 cases per year.
The wine displays crushed stone and limestone minerality at its core, layered with dark fruits — blackberries, black raspberries, plums — along with notes of espresso, licorice, tobacco, smoke, and cocoa. Tannins are structured and salty, with a long, mineral-driven finish. It benefits from at least 5–7 years of bottle age and reaches peak maturity between 6 and 18 years post-vintage. Young vintages should be decanted for approximately 2 hours to open fully.
Best served at 15.5°C (60°F), Les Astéries pairs beautifully with classic meat dishes including beef, lamb, veal, game, duck, and roast chicken, as well as braised and grilled preparations, mushrooms, and hearty fish courses.
