Convite Jabalí is an artisanal mezcal from Oaxaca, Mexico, crafted from 25-year-old wild Jabalí agave (Agave convallis) harvested in the Zapotecan mountains of San Baltazar Guelavila. It is considered the king of mezcals and is the only expression in the Convite lineup to undergo triple distillation, which yields a remarkably robust and complex spirit.

The agave is slow-roasted in an underground pit oven, milled using a traditional horse-drawn tahona, and naturally fermented with spring water before distillation in a copper alembic still. Production is overseen by mezcalero Cosme "Tucho" Hernández and his brother Daniel Hernández, who coax approximately 50 kg of agave per liter of spirit — the lowest yield of any agave used in mezcal production. The result is bottled at 46% ABV as a joven (unaged) expression.

On the palate, Convite Jabalí delivers a harmonious balance of roasted agave and gentle smoke, layered with herbal, minty, and fruity notes, finishing with a distinctive hint of zapotecan plums. Best enjoyed neat. It has earned a Gold Medal at The Fifty Best Mezcal 2025 and Double Gold at the New York International Spirits Competition 2023.
