Salvadores Mezcal Destilado con Tamarindo & Chiles is an artisanal mezcal from Tlacolula de Matamoros, Oaxaca, Mexico, produced at Casa Palacios (NOM 0654X) under Maestro Mezcalero Flavio Pérez Méndez. It is crafted from 100% Espadín agave (Agave angustifolia) matured for 8 years, cooked in a traditional conical earthen pit using sustainably harvested Encino oak, and milled using a horse-drawn stone tahona.
After fermentation in traditional wooden vats (tinas) using well water, the mezcal is double-distilled in an alembic copper pot still. Raw tamarind sourced from just outside San Luis del Rio, Oaxaca, along with freshly cut endemic Oaxacan chile peppers — morita, arbol, guajillo, and ancho — are added directly into the mezcal during the second distillation. Though distillation removes the scorching heat of the peppers, their full flavor remains, resulting in a uniquely approachable mezcal inspired by the classic tamarind-chile street food pairing found throughout Oaxaca and Los Angeles. Bottled at 45.2% ABV with no artificial additives.
The nose offers dried chiles with a touch of sweetness and vegetal freshness. On the palate, expect dry, persistent vegetal character with a long finish and a light roast of medium intensity. Excellent for sipping neat or as a cocktail base.
