Paul Hobbs Cabernet Sauvignon from the Coombsville appellation of Napa Valley, California, presented in a 750ml bottle. This single-appellation Bordeaux blend is composed of 83% Cabernet Sauvignon, 7% Cabernet Franc, 6% Petit Verdot, and 4% Merlot, with 14.1% alcohol by volume.

Coombsville occupies the southeastern edge of Napa Valley, named for Nathan Coombs, the founder of Napa. The appellation sits atop an ancient volcano with distinctive volcanic soils, and benefits from an extended growing season driven by cool marine influence from the nearby San Pablo Bay. These conditions yield muscular, structured wines defined by black fruit character and vibrant minerality.

Grapes are hand-sorted at night while still cold from the field and fermented in small, closed-top stainless steel tanks using indigenous yeasts. The wine undergoes a 5-day cold soak followed by a 28-day maceration with gentle pumpovers and délestage. Spontaneous malolactic fermentation occurs in barrel, and the wine is aged 18 months in 53% new French oak before being bottled unfined and unfiltered.

The wine displays a deep garnet hue and a lush bouquet of crushed blackberry, wild sage, fresh cigar box, and delicate tobacco leaf. The palate is elegantly balanced with supple tannins and fresh acidity, delivering flavors of red currant, dark chocolate, and boysenberry alongside dried herbs and vanilla. A seamlessly layered mid-palate carries through to a long, complex finish. The 2021 vintage received outstanding critical acclaim, earning 97 points from James Suckling, 96 from Decanter, 95 from Jeb Dunnuck, and 94 from Wine Enthusiast. Jeb Dunnuck notes it will evolve gracefully for 15–20 years.
