They are essential for making Dal Makhani, a rich and creamy North Indian lentil dish, as well as idli and dosa batter used in South Indian cuisine. Dry beans must be soaked before cooking — a quick soak involves rinsing and adding beans to boiling water for 2 minutes, then resting covered for 1.5 hours; an overnight soak uses 6–8 cups of cold water for 6–8 hours. To cook, add 6 cups of water to drained beans and simmer gently until tender, approximately 45 minutes to 1.5 hours, adding water as needed to keep beans covered.
