Penfolds Bin 600 Cabernet Shiraz is a celebrated California wine that bridges the winemaking heritage of South Australia with the terroir of Napa Valley and Paso Robles. The story begins in 1998, when Penfolds imported heritage vine cuttings from their esteemed Kalimna and Magill Estate vineyards in South Australia and planted them in Californian soil at the Creston "600" Ranch — the origin of the wine's name. Grapes from those original 1998 cuttings continue to feature in this blend, making Bin 600 a living link to Penfolds' American roots.

This 1.5L magnum presents a soft red/purple core with a ruby rim. The nose is immediately seductive, opening with steamed fig and treacle pudding before transitioning to fragrant roses, warm brioche, blueberry danish, and boysenberry. Savoury complexity emerges through notes of pepper-crusted ham and green peppercorn. On the palate, the wine is creamy and soft with bright cherry, strawberry, and balanced fruit character. The 2021 vintage was matured for 16 months in American oak barriques (53% new), with a pH of 3.6, yielding a structured yet approachable Cabernet Sauvignon and Shiraz blend.

The 2021 vintage earned 96 points from both Tyson Stelzer and Houn Hooke (The Real Review), and 95 points from Andrew Caillard MW. The Napa Valley growing season that year produced intensely flavoured, small-berry fruit with exceptional colour extraction, aromatic intensity, and structure.
