Costco's USDA Choice Beef Shoulder Steak is a flavorful, value-priced cut taken from the shoulder clod of the chuck primal. Also known as Arm Steak or English Steak, it is sliced across the grain from the Shoulder Clod Arm Roast and vacuum packaged to preserve freshness. USDA Choice grade ensures the beef meets high quality standards with good marbling for a balance of tenderness and rich, beefy flavor.
This cut is best enjoyed when marinated before cooking, which helps tenderize the muscle fibers and enhances flavor. It is well-suited for grilling, broiling, or braising. For grilling, cook to medium-rare or medium doneness and allow the steak to rest for 5โ10 minutes before slicing. For a deeper, fall-apart texture, slow braising in liquid brings out its full savory character.
