Typicité Wines Pinot Noir from Santa Lucia Highlands, California, in a 750ML bottle. This wine opens with a bouquet of bright red cherry, raspberry, and subtle floral notes. On the palate, it reveals juicy red fruit flavors including strawberry and pomegranate, intertwined with earthy undertones and a hint of spice. Crisp acidity and silky tannins provide a well-balanced structure, leading to a complex finish with lingering notes of mineral and forest floor.
Typicité Wines was founded by Craig Ploof and Collin Cranor with a vision to craft classic, site-driven Pinot Noir from California's premier coastal vineyards. The winemakers favor cooler fermentations with the use of whole clusters and a 10-month barrel program in French cooperages. This Santa Lucia Highlands bottling is fermented in open-top stainless steel tanks with gentle pumpovers 2-3 times daily and aged 10 months in 100% French oak, 50% new. ABV is 14.6% with a pH of 3.68.
Pairs well with aged gouda, lighter proteins like poultry or pork, and root vegetables. Best served at cellar temperature after opening one hour prior to serving.
