Fresh Wild Petrale Sole Fillet is a premium Pacific Coast flatfish sold by the pound. Petrale sole is widely considered the most desirable and flavorful of all Pacific flounders, prized for its mild, sweet, and buttery flavor with a delicate flaky texture. The fillets are delivered fresh, skinless, and boneless, with approximately 2–3 fillets per pound.

Wild-caught from the Pacific Ocean along the West Coast, primarily between California and Oregon waters, petrale sole earns a "Best Choice" rating from the Monterey Bay Aquarium Seafood Watch program for its sustainable harvesting practices. Because of its delicate texture, this fish shines in classic flatfish preparations such as pan-seared Meunière or Grenobloise with light butter sauces.
