Covenant Chardonnay Lavan is a premium kosher white wine sourced from the Scopus Vineyard, a 10-acre site at the top of Sonoma Mountain. "Lavan" means "white" in Hebrew, reflecting Covenant's heritage as a producer of kosher wines from Northern California and Israel.

The 2023 vintage marks the fifteenth year for the Lavan program. This 100% Chardonnay is whole cluster pressed and barrel-fermented in French oak (10% new) with native yeast, then aged 16 months in French oak. The high-altitude, north-facing vineyard yields a wine with lush California flavor tempered by cool-climate structure. Expect stone fruit, citrus, and spice on the palate, supported by firm acidity, moderate body, and a classic mineral core with a modest hint of toasty oak on the finish.

The wine is sustainably farmed, dry, full-bodied, and drinks in a style reminiscent of fine white Burgundy.
