Pala's Soprasole is a 100% Vermentino di Sardegna DOC from the island of Sardinia, Italy, crafted by the Pala family who have cultivated Vermentino since 1950. The grapes are grown at the "Is Crabilis" vineyard in Ussana at 150–180 meters elevation on calcareous soils, with vines averaging 45 years of age. The name "Soprasole" translates to "above the sun," a nod to Sardinia's brilliant light, white limestone cliffs, and emerald coastal vineyards overlooking the Gulf of Cagliari.
Vinification involves soft pressing followed by fermentation in stainless steel at a controlled 15°C using natural yeast, then aging on the lees in stainless steel vats for four months. This process preserves the wine's vibrant aromatic profile and fresh acidity. The resulting wine shows a bright straw yellow color with greenish reflections, persistent floral aromas with herbaceous notes, hints of lime, white nectarine, chamomile, and crushed stone. On the palate it is medium-bodied with a silky, slightly oily texture, notes of spiced apple, baked pear, and a long, saline mineral finish.
Best served at 10–12°C, Soprasole pairs beautifully with seafood, grilled fish, and lightly seasoned coastal Italian dishes.
