East Coast Seafood Wild U20 Hokkaido Scallops are premium, restaurant-quality sea scallops sourced from the cold, pristine waters off Hokkaido, Japan. The "U20" designation indicates a size grade of under 20 scallops per pound, making these among the largest and most prized scallops available. Each 2-pound bag contains approximately 18 to 23 individually frozen, wild-caught Patinopecten yessoensis sea scallops with a single ingredient — no additives, preservatives, or water added.
Hokkaido scallops are renowned worldwide for their firm, buttery texture and naturally sweet, delicate flavor that sets them apart from farm-raised or domestic varieties. Their high protein content and clean flavor profile make them a favorite among seafood enthusiasts and home chefs. They are caught raw and flash-frozen to lock in peak freshness and quality.
To prepare, thaw overnight in the refrigerator or place the sealed bag under cold running water. Pat the scallops thoroughly dry before cooking to ensure a proper golden sear. Pan-sear in a cast-iron skillet with butter and garlic over high heat — just 1 to 2 minutes per side produces a beautifully caramelized crust with a tender, moist interior. These scallops are equally exceptional served raw as sashimi, in scallop crudo with citrus and chili, or atop pasta and creamy risotto.
