Shimizu-no-Mai Pure Dawn is a Junmai Ginjo sake crafted in Akita, Japan — one of the country's most celebrated regions for artisan sake production. This 720ml bottle is presented at 15.5% ABV and is produced by the Akita Shurui Seizoh Company, a collective of small family breweries with origins dating back to 1656, formally established together in 1944.
The brewery is situated where three pristine mountain rivers converge in Akita prefecture, providing some of Japan's purest water — a defining characteristic of the sake's exceptional clarity and balance. Shimizu-no-Mai was the first brewery in Akita to establish on-site rice polishing facilities, allowing them to polish their rice at least 5% beyond the legal minimum requirement. This relentless pursuit of quality has earned them 17 consecutive gold medals at Japan's prestigious National New Sake Awards, the country's only national blind tasting competition.
Pure Dawn is brewed from locally grown Akita Sake Komachi and Miyamanishiki rice. The sake opens with aromas of orange peel and delicate floral notes, with an underlying minerality. On the palate it is fresh and well-structured, offering subtle notes of pear and Fuji apple with a creamy, silky mouthfeel. The finish is soft-sweet, transitioning gently to dry. Pairs well with seafood, chicken, and light pasta dishes.
