Nialas—named from the Irish Gaelic word meaning "zero" or "nothing," a nod to the brew's non-alcoholic nature—was developed over three years by Summit's Chief Brewing Officer Damian McConn. Rather than stripping alcohol from a conventional beer through reverse osmosis or vacuum distillation, Nialas is brewed from the start with a purpose-built process to retain the flavor and body of a regular beer without introducing alcohol.
