Bozal Pechuga is a ceremonial craft mezcal made with 100% agave Karwinskii (typically Cuishe, though some batches use Cupreata or Papalote varietals) from Rio de Ejutla, Oaxaca or Mazatlan, Guerrero. This artisan mezcal follows an age-old tradition where the agave is crushed, baked in earthen pit ovens, fermented, and then distilled in copper pot stills using the sacrificio method.
After the second distillation, an organic cooked chicken breast marinates with locally sourced fruits, chiles, citrus fruits, raisins, cinnamon and clove. Once fully marinated, the chicken and spices are added to the still for the third and final distillation. This ritual has been passed down through four generations with the recipe remaining unchanged to preserve family tradition.
The nose presents fruity aromas with red fruit notes of apple, grape, and mango, complemented by floral undertones, brown sugar, cinnamon and baking spices. The palate delivers a rich mouthfeel with flavors of roasted fruit, sweet red fruit, mineral notes, earthy tones, mint, chocolate, and subtle smokiness. The finish is dry with peppery notes and hints of red apple skin. Bottled at approximately 47% ABV, this limited release mezcal is produced in small batches for ceremonial and festive occasions.
