A classic Burgundy red wine made from 100% Pinot Noir grapes sourced from the renowned Côte Chalonnaise region, specifically around Château du Cray near Mercurey. The wine is crafted by Maison André Goichot, one of the last independent family wineries in Burgundy, spanning three generations and 35 hectares of estate vineyards.
The wine opens with aromas of fresh cherries, rose petals, and black peppercorns, accompanied by subtle herbal notes from whole-cluster inclusion. On the palate, it delivers a basket of small red and black fruits including strawberry, cherry, blackcurrant, and bilberry, later evolving into cooked prune, peppery notes, and hints of animal, underbrush, and mushroom. The wine is light-bodied with bright acidity, lively structure, well-rounded backbone, and smooth tannins that complement the vibrant red berry flavors and hint of minerality.
The grapes are grown on limestone-rich soils mixed with clays and marls at the foot of wine-growing slopes. Vinification includes destemming and aging in stainless steel vats for about 4 weeks followed by 12 months of aging before bottling. The wine benefits from aeration to develop its full expression. Serve at 16-18°C and enjoy with grilled red meats, roasts, game, roasted chicken, duck, pasta, tacos, or soft cheeses such as Camembert and Brie. Aging potential of 5-7 years.
