Billaud-Simon is a prestigious Chablis estate in Burgundy, France, founded in 1815 following the Napoleonic wars. The domaine expanded through the marriage of Jean Billaud to Renée Simon in the 1930s and today manages approximately 42 acres across multiple Chablis appellations, including Grand Cru vineyards in Les Clos, Les Preuses, Vaudésir, and Les Blanchots, as well as Premier Cru sites such as Montée de Tonnerre, Mont-de-Milieu, Fourchaume, and Vaillons.
This Chablis is crafted from Chardonnay grapes grown in the cool, chalky Kimmeridgian limestone soils that define the Chablis appellation. Grapes are harvested by hand at optimal ripeness and pressed pneumatically. The wine undergoes cold maceration for 5 to 7 days before fermentation, then ages approximately 14 months including time in French oak, yielding a wine that is characteristically crisp, mineral-driven, and refreshing with notes of green apple, lemon citrus, and flinty stone. The estate was acquired by François Faiveley, with Olivier Bailly serving as régisseur, continuing the tradition of meticulous Chablis winemaking.
